Starbucks Pumpkin Spice Latte Copy-Cat Recipe


Fall is just around the corner and I’ve already seen at least 1/3 of my social media news feeds updated with pumpkin spice, fall, halloween and cozy cute outfits. There’s a few different ways to recreate your favorite fall hot coffee. This copy cat version of the Pumpkin Spice Latte recipe from Starbucks is easy and yummy!

You will need:
Instant Coffee
Organic Stevia
Delight Pumpkin Pie Spice Creamer
Shot of Expresso (optional, I prefer without)
Whip Cream with a dash of Cinnamon

Easy Directions
Make your instant coffee
Shot of expresso
Use the Pumpkin Pie Spice creamer
Add a bit of sugar, whip cream, cinnamon and you’re ready!

I’m not a huge fan of their typical drinks, I’m obsessed with the Cool Lime Refreshers, I’m not a HUGE coffee fan, but who passes on pumpkin spice?! Not this girl!

Easy Vegan Pancakes


I always have a hard time finding new ideas for breakfast, especially when it comes to pleasing my lovely 4-year-old. He’s not a picky eater but he’s obsessed with pancakes, so I decided to invent an easy vegan pancake recipe since we didn’t have eggs. 





  • 2 Cups of Flour
  • 1 Cup of Almond Milk
  • 1 tablespoon of Syrup (we used honey)
  • 1 Tablespoon of Vanilla Extract
  • 2 Dash of Cinnamon (optional)
  • Milk Chocolate Chips (optional)

Directions are pretty easy:

  • Mix all ingredients in a mixing bowl
  • Use Non-Stick spray (we used Pam)
  • Pour desired pancake size batter onto heated skillet or griddle
  • Flip and Enjoy!

Pumpkin1Pumpkin fall pancakes can also be used on this recipe, just add a dash or two of Pumpkin spice and you’ll have a season explosion in each hotcake bite!


Easy Fried Egg Sandwich – Heart Shaped!


We’ve all heard that line, “breakfast is the most important meal of the day”. When I have time to make a quick meal in the morning, I always go for a breakfast egg sandwich. It’s easy, quick, and delicious!

My soon to be 4-year-old, Sonny, loves to have egg sandwiches. He’s going through the helping stage and eager to learn. I wanted to make his cooking experience fun. As I was bargain shopping at Ross, I found a revolver gun mold ring, perfect for pancakes, eggs, cookies, you name it! Therefore, it sparked the idea to grab a few different shapes to make our breakfast a bit on the creative side. We now have a few different molds to choose from. We bought the following set as a pack: heart, circle, flower a star. Although we bought our gun revolver ring at Ross, I found one on Amazon. One of the perks about the metal fried egg rings, they can be used for multiple purposes: breakfast, desserts, play time, etc. Sonny loves to make molds with playdoh, you can check out my DIY Homemade Playdoh recipe, it was pretty fun! You can even make Egg in Nest, another yummy breakfast idea with the ring molds.


There is even a cute teddy bear egg ring! If you’re making the Egg in a Nest, you can use cookie cutters for the bread. Avoid using the plastic cookie cutters on the heated frying pan, it will melt away or ruin your cutter.

My Favorite Avocado Egg Sandwich Recipe:

  • Pam non-stick cooking spray
  • Bread
  • Light Butter spread
  • Avocado slices
  • 2% American Cheese
  • Fried Egg
  1. Spray Pam (non-stick cooking spray) on skillet
  2. Toast Bread
  3. Fry your egg(s)
  4. Spread Butter on toast
  5. Add Cheese to Frying egg
  6. Add Egg(s) and Cheese to toast
  7. Add Avocado (optional)
