Vegetarian Chili Recipe


OMG! Doesn’t this chili bowl look delicious!??! It makes my mouth water! Check out this delish recipe for a filling vegetarian chili.

You will need:

  • 2 Sweet potatoes
  • 1 Tsp cayenne pepper
  • 1 Tsp ground cumin
  • 1 Tsp ground cinnamon
  • Freshly ground black pepper
  • 1 Tsp olive oil
  • 1 Onion
  • 1 Red capsicum
  • 1 Yellow capsicum
  • 2 Cloves garlic
  • 1/2 Cup fresh coriander
  • 2x 400g can of pinto/black beans
  • 2x 400g can of chopped tomatoes

Directions Preheat oven to 400 F

  1. Peal & Dice sweet potatoes
  2. Sprinkle with a pinch of cayenne, cumin, cinnamon, and pepper
  3. Drizzle with 1 teaspoon olive oil
  4. Spread out on a baking tray
  5. Cook for 40 mins
  6. Deseed the chili and capsicum
  7. Roughly chop the chili’s, capsicum, onion, garlic and coriander
  8. Heat a large saucepan with 1 teaspoon olive oil
  9. Add the onion, capsicum and garlic, cook for 5 mins on saucepan
  10. Add the chili and spices and cook for 5-10 mins, stirring well
  11. Drain the beans and add the beans and tomatoes
  12. Stir well and bring to boil, then reduce to a medium heat and cook for 25-30 mins
  13. Stir the roasted sweet potatoes through your chili with most of the coriander leaves
  14. Serve with some sour cream, guacamole, rice or tortilla chips

Who wouldn’t want to have this yummy dish?!?!?! My husband loves it! It’s a little time consuming but worth every bite.
