Avocado Breakfast Burrito




We all love Momma’s cooking! I personally absolutely love it when my mom makes these awesome Avocado Burritos. I’ve got a bit of an obsession with quick breakfast meals that I can just grab and go. I wanted to share her recipe with you all.

Avocado Breakfast Burrito

You will Need:

  • 4 tortillas
  • 1 large boiling potato, peeled, diced, and cooked
  • 1/4 lb Mexican chorizo (chopped and cooked)
  • 4 eggs
  • 1/8 tsp pepper (optional)
  • 1 Tbsp olive oil
  • 1/2 cup Fiesta blend grated cheese
  • 3 avocado, diced
  • 2 Tbsp salsa


  1. Mix Chorizo, potato, eggs
  2. Add Olive Oil to Skillet, Place Chorizo/Potato/Egg mix in skillet
  3. Cook on low, stir occasionally
  4. Add pepper (optional)
  5. Warm up Tortilla’s
  6. Add cooked Chorizo/Potato/Egg mixture evenly into four tortillas
  7. Add Cheese, Avocado, Cheese and Salsa
  8. Wrap up and cut in halves
